Flapjack with rum raisins - my favourite tray bake

This is a simple to make tray bake which is delicious:

  • Oats 300g

  • Demerara sugar 150g

  • Butter 150g

  • Golden syrup 2 tablespoons

  • Raisins 100-120 g

  • Dark rum for soaking raisins

Method

Put the raisins in a small bowl or glass and pour the rum you don’t need fully cover but just so all raisons are in contact with the rum. Allow at least 30 minutes for the rum to soak in, I usually leave about an hour.

Place the oats and sugar in a large mixing bowl, mix with a wooden spoon to ensure the sugar is evenly distributed in the oats.

Melt the butter, I usually melt in a small pan on the hub, but you can also use a microwave if you prefer. When fully melted pour over the oats & sugar and mix together until all the oats are full cover in butter. Then add couple of tablespoons of golden syrup and mix into the oats.

Drain the remaining rum from the raisins, then add the raisins to the oats - and mix in.

The mixture is now ready - grease a braking tray, I use butter for this - I use a a x b size tray - and transfer the mixture for the tray - then spread out over the whole tray and lightly press done to ensure flat surface.

Put the tray in an oven - pre-heated to 160-170 C (fan oven) - and bake for about 15 minutes.

Allow to cool in the tray, I usually will cut the flapjacks will cooling 10-15 minutes after removing oven - then leaving for about about 45 minutes before removing from tray.
